Had a fabulously lazy day away from the elements. Here in New England, we've had back-to-back blizzards, first Nemo last weekend, and this weekend a nameless but still unpleasent one. Thankfully, unlike most of my neighbors, we never lost power or heat. But since most people were out of power and the roads were unsafe, all of my activities were cancelled for both weekends. Anyway, I stayed in as much as possible today, enjoying a local radio station's Sunday reggae show,  and keeping warm. I made good progress knitting my socks ;) Around lunchtime, however, I got very very hungry. And, around the same time noticed that we had two potatoes sitting on the counter. So, I decided to try and make hash browns! They were SUPER easy, so I've included some instructions at the bottom.

It's super simple. So, first you need to boil a few potatoes. I did two large potatoes. After they've cooked about 75%, drain the water, and leave them to cool. Once they've cooled off, use a manual cheese grater, and grate the potatoes into a bowl. You should have short little shreds. Set your skillet to medium heat, and thinly coat the bottom of your pan with vegetable oil. In addition, I used a little bit of Smart Balance Organic vegan butter. After it had heated up, make your shreds into little patties and place them into the oil. Once that side has browned, flip them. They might pull apart, but that's okay. Keep flipping until they've reached a desirable brown on either side. Remove from pan, and put on a paper towel to cool and absorb oil, then enjoy!
